Recipe: Collagen cassava pancakes
A delicious, gluten free and protein packed breakfast or snack option that is great for you and the kids. This serves 1 making approximately 6 small pancakes.
Ingredients:
- 150ml water 
- 2 eggs 
- 1 tsp apple cider vinegar 
- 1/2 tsp baking soda 
- 1/2 cup cassava flour (or more until reached desired consistency- each cassava flour brand can be different) 
- 3 tbsp Nutraviva collagen powder 
- Butter or ghee for frying 
Method:
- Blend all ingredients together 
- Melt butter or ghee in frying pan and cook pancakes for 1-2 minutes on both sides 
- Serve with pure maple syrup, stevia and lemon, fresh berries or jam and enjoy!
