Recipe: Baked Green Eggs
I’ve been getting bored of my usual eggs and bacon so mixed it up with this yummy baked eggs.
Ingredients:
1 tbsp olive oil
1/2 cup spinach chopped
2 tbsp parsley chopped
10 olives
Salt and pepper
4 eggs
1/4 cup goats cheese (make sure if it’s marinated, it’s not in vegetable oil!)
Sourdough bread
Method:
1. Preheat oven to 180 degrees
2. Add your chopped spinach and parsley to an ovenproof dish with the olives, olive oil, salt and pepper and mix
3. Crack eggs on top
4. Sprinkle goats cheese over
5. Bake for 10-15 minutes or until eggs are cooked to your liking
6. Serve on sourdough toast and enjoy
