Recipe: Collagen cassava pancakes

A delicious, gluten free and protein packed breakfast or snack option that is great for you and the kids. This serves 1 making approximately 6 small pancakes.

Ingredients:

  • 150ml water

  • 2 eggs

  • 1 tsp apple cider vinegar

  • 1/2 tsp baking soda

  • 1/2 cup cassava flour (or more until reached desired consistency- each cassava flour brand can be different)

  • 3 tbsp Nutraviva collagen powder

  • Butter or ghee for frying

Method:

  1. Blend all ingredients together

  2. Melt butter or ghee in frying pan and cook pancakes for 1-2 minutes on both sides

  3. Serve with pure maple syrup, stevia and lemon, fresh berries or jam and enjoy!
