Recipe: Collagen cassava pancakes
A delicious, gluten free and protein packed breakfast or snack option that is great for you and the kids. This serves 1 making approximately 6 small pancakes.
Ingredients:
150ml water
2 eggs
1 tsp apple cider vinegar
1/2 tsp baking soda
1/2 cup cassava flour (or more until reached desired consistency- each cassava flour brand can be different)
3 tbsp Nutraviva collagen powder
Butter or ghee for frying
Method:
Blend all ingredients together
Melt butter or ghee in frying pan and cook pancakes for 1-2 minutes on both sides
Serve with pure maple syrup, stevia and lemon, fresh berries or jam and enjoy!
