Recipe: Slow Cooked Mexican Beef

A versatile recipe that can be meal prepped and added to many different types of dishes!

Ingredients:

  • 1kg beef chuck steak

  • 1.5 tbsp chipotle powder

  • 1 tbsp paprika

  • 1 tbsp dried oregano

  • 1 tsp all spice

  • 1 tsp coriander powder

  • 2 tsp onion powder

  • 1 tsp salt

  • 1 tsp pepper

  • 1 can crushed tomatoes 400g

  • 2 tbsp bone broth concentrate

  • 1 cup water

Method:

  1. Mix up all of the dried herbs and spices to create a spice mix

  2. Place your beef in the slow cooker. If your not lazy like me you might sear off the meat in a pan with some oil first but it’s not necessary

  3. Sprinkle the dry rub over the meat

  4. Add the bone broth concentrate, water and crushed tomatoes and give it all a mix

  5. Place your slow cooker on low and cook for 4-6 hours

  6. Once it’s tender and falling apart place the dish in an oven at 200 degrees with the lid off

  7. Cook for 30-60 minutes to allow the sauce to thicken up and the meat to get a knarly crisp to it.

  8. Serve many ways

  • With rice to make a burrito bowl

  • In wraps for tacos

  • With homemade coleslaw on the side

  • Over pasta
